A Waldorf salad is a fruit and nut salad with mayo dressing originated from New York, United states. It is basically made from apples, celery, walnuts and mayo dressing served on the bed of lettuce. It should served chill.
It is one of the healthiest salads and it can be a vegan salad too my making egg mayonnaise to vegan mayonnaise.
HISTORY OF WALDORF SALAD
The history is where the waldorf salad is created in New York in Waldorf Astoria hotel for the charity ball in the honor of St. mary’s hospital children.
It traditionally contains apples, celery and mayonnaise. The addition of nuts in the recipe is added after the recipe is published in THE RECTOR COOK BOOK.
THE VARIATIONS OF WALDORF SALAD
As I told it is originally with apples, celery and mayonnaise which is served over bed of lettuce. Later nuts were added in the recipe and it became the standardized version.
Modern variations includes addition of chicken, fruits, yoghurt dressings and so on.
Vegan mayonnaise is so popular in the market and it is broadly available ready made. It is made from coconut milk powder or soya milk powder or cashew powder, oil and stabilizing agent.
Method and quantity is same as vegetarian mayonnaise where the milk powder is replaced by coconut milk powder or soya milk powder.
This is what you get in shops with tandoor chicken or any starters. Most people think its an egg mayonnaise but no its an vegetarian mayonnaise and that is why the taste is different from what you make in home and what you get in store.

Mix the milk powder to water and also add lime juice and salt.

Ratio of milk powder to water is 1:10
Slightly beat the milk water and add di jon mustard and whisk it in continuous motion by adding oil.
Consistency might vary due to the addition of oil. if you prefer little thick add more oil and little watery means less oil. In this recipe the oil is like medium consistency those you get from hotels, restaurants and shops.
Mayonnaise sauce is a classical mother sauce in French cuisine made from eggs and oil which is also known as cold sauce. It is great accompaniment to tandoori dishes and a great dressing for salad.
BLEND THE INGREDIENTS
In a bowl add the whole eggs, salt, di jon mustard paste, vinegar and whisk it a bit.
Once the egg is little foamy add oil gradually while continuously whisking.
The above step is very important to make sure the sauce is not curdled.

PREPARE THE INGREDIENTS
Prepare mayonnaise dressing for the salad.

CHOP THE VEGGIES
Cut the apples into small cubes and rest them in salt water to avoid decolorization of apples.
Cut celery stem into small pieces.
Roast the walnuts if not semi roast to enhance more flavor. This is optional.
Clean the grapes if you are using it.
MIX THE SALAD
In a bowl add the mayonnaise, apples, celery, grapes and mix them well.
Then add the walnuts and give a quick toss.
