GREEK SALAD

Greek salad or horiataki salad is one of the healthiest salads from Greek cuisine. The perfect combination of veggies to cheese with tangy dressing from red wine vinegrette makes it delicious and healthy.

Greek salad is usually made of tomatoes, feta cheese, cucumber, olives, onion, and capsicum with red wine dressing.

It is also known as summer’s salad or farmers salad.

CHOICE OF INGREDIENTS

My olives of choice are Kalamata olives. Commonly used in Greek food, their salty, briny flavor is delectable alongside the feta and crisp veggies. Instead of slicing large tomatoes, I use cherry tomatoes because they release less water into the salad than larger tomatoes would. I also seed my cucumber to avoid making my salad watery.

WHAT CAN BE SERVED WITH GREEK SALAD?

It can be served with grilled items, roasted items due to freshness and earthiness. It can also be served with breads.

Greek salad is actually known as farmers salad as the ingredients are traditionally grown in their land by farmers and had with grilled items during their harvest time.

DRESSING

The wine used in Greek salad is usually red wine or rose wines. The particular sourness from the vinegar makes the best with cheese and veggies.

You can also use other dressings like using your favorite wine paired with salad or using additional herbs in the dressing like chopped mint or dried herbs to add more flavor.

Other vegetables can be also be replaced like addition of cherry tomatoes rather than regular tomatoes, using different color capsicums, and if you don’t like the flavor of raw onion it can be avoided.

Cut the onions into little medium thick slices.

Cut the tomatoes into one by four.

Remove the cucumber seeds and cut into medium thick slices.

Cut the feta cheese into medium thick triangles.

Cut the capsicums and deseed it and cut into squares.

  2. PREPARE THE DRESSING

    In a bowl add red wine vinegar olive oil salt and pepper and mix it nicely until it is emulsified together.

    You can add little di jon mustard paste if the dressing is not emulsifying

MIX ALL THE INGREDIENTS

  1. In a bowl add all the ingredients and add little salt and rest for 5 minutes.

    If any water is there it will be removed. Then add the dressing and give a quick mix.
