PLANTAIN BURRITOS
Plantain burritos or tacos are fusion recipe for the classic Mexican burritos or tacos. It is a modernized version with more nutritious and healthy gluten free burritos or tacos. It is tasty and gluten free burritos for those who love tacos or burritos or any Mexican dish. Plantains means raw bananas in Caribbean cuisine.
Plantains are basically raw bananas which is boiled and then deep fried and served with fresh vegetables and mint sauce. Here I am showing the vegetable version of plantain burritos but it can be replaced with chicken or prawn easily which gels with raw banana easily.
HOW TO MAKE MINT SAUCE?
METHOD
FOR BANANA BASE
Cut the raw banana into two or three pieces and put them in boiling for about 10 minutes with little salt. No need to remove skin before boiling as it helps in enacting more banana flavor into it.
Once boiled, cool and remove the skin and grate the boiled raw banana.
Add chili powder and salt and give it a nice mix. In this if you are preferring crispness more I suggest adding bread crumbs or panko bread crumbs or you can add little rice flour which is gluten free and also helps in giving crispiness to the product.
Once mixed, rest in freezer for about 5 minutes before frying.
Heat the oil aside and roll the banana mixture in your preferred way like burritos sheets or taco shells or even cups and fry them till golden fry and remove the excess oil.
FOR THE VEGETABLES
Cut all the vegetables into thin slices and add lemon juice and black pepper powder and salt and rest it for about 5 minutes which releases the water from the vegetables.
Drain it and serve with mint sauce.
- In a pan add oil, garlic chop, onion chop and cook till translucent or before golden fry. Add tomato puree, oregano, salt and cook for 5 minutes. Add the chopped or grounded chicken and cook for 10 minutes, check the seasoning and add cream or yoghurt in it and give it a quick mix and remove from flame. This is can subtituted with any meats or even vegetables.
ARRANGING
Once everything is ready, take a fried raw banana cup or taco or burrito and apply mint sauce as a layer and them keep the vegetables and drizzles a mint sauce and yoghurt sauce.
