DONUTS

Doughnut or donut is usually a fried leavened dough with fillings and toppings. The fillings can be anything from fruit coulis and chocolates to classical custard filling.

The classical donut is usually fried but now a days baked version also available but i prefer on classical fried ones which has more soft texture and perfect to eat.

The toppings can be a dusted sugar donut or chocolate glazed with favorites sprinkes.

HISTORY OF DONUTS

It is believed that the history of doughnut started by an accident. The exact location is not said to be found by but various theories say in England when a captain mother accidently prepared fried dough for her son so it can last long who is shipping and the son gave a credit to his mother by telling just to change by putting hole in the center. Various evolutions and theories have made from that.

The doughnut is the original form but it is also changed to donut when a famous news magazine company published the article of donut misprinting it as donut.

TRICKS AND NOTES

Donuts needs less fermentation as we are frying it and also to give compact structure and not air pockets much inside through fermentation.

The dough should not be dry. It should be soft and medium dough.

The quantity of yeast depends on the climatic conditions as in winter humid times the yeast ferments slower and during summer its faster where less yeast is preferred.

The classical donut is sugar coated or glazed. The chocolate glazed is a typical fashion donut selling style.

The filling is usually custard but modern variations has different fruit flavors, chocolate fillings, flavored cream etc.

    Description

    Doughnuts or donut is usually a leavened fried dough and served with fillings and toppings.

    Ingredients

    FOR CUSTARD SAUCE FILLING

    METHOD

    1. PREPARE THE DOUGH

      First measure all the ingredients correctly which is the key factor in baking.

      In a small bowl add yeast and warm water and little sugar so the yeast can ferment. 

      In a bowl or in a clean table  sieve the flour along with sugar and salt, gluten and bread improver.

      Add the fermented yeast and Pour the milk and roughly mix it by combining.

      Add water slowly and knead it until combined and medium dough with moist.

      Once 80% combined add butter and knead for more 5 minutes. 

      Do not knead the donut dough more as it spoils the final product.

      Once kneaded make a big ball and keep for fermentation 5 minutes.

    2. PREPARE THE DOUGHNUT

      In a kadai or pan with flat surface pour oil and keep for heating.

      Once the dough is fermented for 5 minutes, remove and sheet it into a medium thickness.

      Cut using round cutter and one small cut inside the cutted round.

       

       

    3. FRY THE DOUGHNUT

      Once the donut is cut, fry them in the medium oil and cook till golden brown.

      Make sure the oil is in medium het otherwise the donut will be uncooked from inside.

      Once cooked remove and coat in with cinnamon sugar ( cinnamon powdered with sugar). 

      Or you can glaze it with melted chocolate or fill with custard filling.

    1. FOR THE CUSTARD SAUCE
      In a pan, add the milk to heat up along with sugar. Once it is one boiled, add the custard powder and mix with without forming any lumps. Once it starts thickening remove from flame, cool it and fill in the donuts.

    Note

    Remove the doughnut from frying before its get golden brown as sugar content present in the doughnut will tend to caramelize more and give more color once removed.
