Ingredients

  1. First add the oil in a deep measuring cup or bowl and keep in refrigerator for getting chilled.

    Peel the carrots and roughly chop the carrots. In a saucepan add water and keep for boiling  and add the chopped carrots.

    Cook for 5 – 7 minutes or until tender and strain it and cool completely.

    Add the carrot in the blender and add water or stock and grind into fine paste and sieve through the strainer and keep aside the carrot juice.

    In a pan add the fine sieved carrot juice and add the vegetable stock more if required and reduce it completely.

    Add herbs and salt and measure the juice to 100 ml.

    Add 5 grams agar agar and reduce it little for 1 minute in slow flame.

    An 100 ml vegetable juice takes 5 grams agar agar.
  2. Take a syringe without the needle and take the juice inside the needle and drop in the cold chilled oil like droplets.

    Let the droplets rest for 2 minutes and strain the pearls and can be stored in refrigerator for further use.

    Do not overcrowd with droplets in oil and keep the juice warmer till the end so it does not get more thick or forming layers can be avoided.
