Pumpkin puree
Pumpkin puree or sauce is a sauce made from fine puree of pumpkin, vegetable stock, flavorings and aromat and used as accompaniment or as plating sauce.
It is usually Paired with variety of ingredients such as pickled cucumbers, gingers, nutmeg, cinnamon, dark chocolates, chestnut, truffles, bacon, lime and so on.
How to make pumpkin puree or sauce ?
There are different ways a pumpkin puree can be made but basically I prefer this two ways one is roasting method and other is Boiling method.
Each method has unique taste due to ways of cooking pumpkin.
Method 1: Boil the pumpkin and cool it down . Then sauté them with butter, herbs and stock and then grind it using xanthum gum.
Method 2: Roast the pumpkin along with herbs and butter and then grind them along with vegetable stock and xanthum gum.
Below down recipe indicates the second method. If you want first method just boil pumpkin and sauté and grind them. Ingredients remain same.

- Clean the pumpkin and remove the seeds completely. Remove the skin too but if your are roasting you can leave skin as it is easy to remove after roasted.
- In a baking tray , apply little butter, place the cut pumpkin, thyme, oregano, salt and melted butter on top.
- Place it in the oven for 15 minutes at 200 degree celsius.
- Cool it and transfer them to mixer or blender. Add vegetable stock and xanthum gum and grind into fine puree.
- Adjust the seasoning if required and strain the puree completely using siever.
- Can be used up to 5 – 7 days storing in refrigerator.
Notes
- Vegetable stocks more flavor to the puree and it is more healthy.
